What a week! In light of all the tragedy this week, I really want to send my thoughts and prayers to all of those affected by the Boston and West Texas events. I am always, however, impressed with the human spirit and how we as a country and people unite and try to reach out to those who are hurting and in pain. I salute all emergency workers and communities that pull together.
The calendar says Spring, but the weather is stating something different! I mean it is cold here! I saw snow flurries this morning! Just a few days ago it was almost 90 degrees! Well, it's Friday and time to reflect and be thankful for family and safety and our freedoms in our great country. I have decided to share a quick and easy comfort food recipe with you. This is my families favorite pasta! The trick is a smoked chicken mixed with pasta.
SMOKED CHICKEN ZITI BAKE
Ingredients:
Package of high quality ziti style pasta noodles
1 jar of Tomato Basil pasta sauce (my preference: Classico)
Smoked Pulled Chicken (The Easy Way: I purchase smoked pulled chicken from our local market)
Fresh Basil leaves(chopped)to taste
3 Cheese Blend Shredded Cheese (Mozarella, Provolone, Parmesan)
Fresh Parmesan for garnish
Boil Noodles per directions, Next Pour the strained noodles into a dutch-oven or casserole dish, Add pulled chicken, pasta sauce, Add chopped basil, Add about 1/3 package of shredded cheese and Stir!
Put in oven at 350 degrees for about 30-35 min.
Garnish with Freshly grated parmesan
Serve with Fresh Bread
Possibly add red wine in the mix
